Creamy Spinach Enchiladas

- 1 tbsp margarine shopping list
- 1/2 cup sliced onions shopping list
- 1 (9 oz) frozen spinach in a pouch, thawed, squeezed to drain shopping list
- 1 cup low fat cottage cheese shopping list
- 1/2 cup light sour cream shopping list
- 6 oz monterey jack cheese, shredded shopping list
- 12 (6 inch) flour tortillas, heated shopping list
- 1 (10 oz) can mild enchilada sauce shopping list
How to make it
- Heat oven to 375 degrees
- Melt margarine in skillet over medium high heat. Add 1/2 cup green onions; cook and stir 2 minuts or until crisp tender.
- Add spinach; cook 1 minutes or until spinach is warm, stirring occasionally. Remove from heat. Stir in cottage cheese, sour cream and 1 cup of the cheese.
- Spoon 1/4 cup filing down center of each tortilla; rool up. Place, seamside down, in ungreased 9 x 13 pan. Pour enchilada sauce evenly over tortillas; sprinkle with remaining cheese.
- Bake 375 degrees for 15 to 20 minutes or until bubbly and thoroughly heated. Sprinkle with sliced green onions if desired.

You just sold these to a Texan! Have to make these.. they serve something like it here... but with a white sauce on top! This just might be better for me and my hips..
