How to make it

  • Heat oven to 375 degrees
  • Melt margarine in skillet over medium high heat. Add 1/2 cup green onions; cook and stir 2 minuts or until crisp tender.
  • Add spinach; cook 1 minutes or until spinach is warm, stirring occasionally. Remove from heat. Stir in cottage cheese, sour cream and 1 cup of the cheese.
  • Spoon 1/4 cup filing down center of each tortilla; rool up. Place, seamside down, in ungreased 9 x 13 pan. Pour enchilada sauce evenly over tortillas; sprinkle with remaining cheese.
  • Bake 375 degrees for 15 to 20 minutes or until bubbly and thoroughly heated. Sprinkle with sliced green onions if desired.

    You just sold these to a Texan! Have to make these.. they serve something like it here... but with a white sauce on top! This just might be better for me and my hips..
