Black Beans and Rice

- 16 ounce bag white rice, cooked acording to package directrions shopping list
- 16 ounce can black beans, drained and rinsed shopping list
- 16 ounces of diced tomatoes with green chilis added shopping list
- 4 slices of bacon, fried crisp and crumbled shopping list
- 1 clove garlic, crushed shopping list
- 1 onion, chopped shopping list
How to make it
- Fry onions with the bacon until they are translucent and the bacon is crisp. You can cut the bacon into 1/2 inch slices frist instead of crumbling it after wards.
- Cook the rice so it is nice and fluffy.
- Add bacon/onion mixture and black beans to the rice.
- Mix well.
- Add the tomatoes, mixing well again.
- If needed add some broth to desired consistency.
- Serve warm as a side or wrap them in fresh fry bread.
- Enjoy
