How to make it

  • Fry onions with the bacon until they are translucent and the bacon is crisp. You can cut the bacon into 1/2 inch slices frist instead of crumbling it after wards.
  • Cook the rice so it is nice and fluffy.
  • Add bacon/onion mixture and black beans to the rice.
  • Mix well.
  • Add the tomatoes, mixing well again.
  • If needed add some broth to desired consistency.
  • Serve warm as a side or wrap them in fresh fry bread.
  • Enjoy
