I make these in ramekins for individual instead of using a baking dish. It's great served as a side dish or a dessert!

Ingredients
  • 3 cups mashed sweet potatoes (I used canned sweet potatoes - you can either mashed with a fork or put it in a blender and blend til smooth for a creamier taste)
  • 1 cup brown sugar (I used light brown sugar)
  • 2 eggs beaten
  • 1/2 cup milk
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup melted butter
  • 1 cup chopped walnuts

Directions
  1. Heat oven to 350 degrees (if you use gas oven, do 325)
  2. After you mash/blend the sweet potatoes, add 1 cup brown sugar(I like mine with a bit of texture so I forked it)
  3. In a separate bowl, whipp the eggs, milk and melted butter together until fluff and fold in the sweet potatoes
  4. Grease a baking pan and pour the sweet potato mix in
  5. Meanwhile, mixed together the last 4 ingredients (above) and top it over the sweet potato mix evenly.
  6. Bake for about 25-30 min. or until the toppings are oozing out
