Cheddar Cheese Soup Recipe

Ingredients
  • 1 cup finely chopped onions
  • 1 cup finely chopped carrots
  • 1 cup finely chopped celery
  • 1/2 cup butter
  • 1 cup flour
  • 1 quart chicken stock
  • 1 quart milk
  • 3 cups grated cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper

Directions
  1. Saute vegetables in butter until soft.
  2. Add flour and mix until smooth.
  3. Add chicken stock.
  4. Bring to a boil;reduce heat and simmer for 15 minutes.
  5. Add cheese and cook 10 minutes longer.
  6. Add milk, salt and pepper.
  7. Heat to serving tempature.
  8. Makes approximatrely 2 quarts or 12 servings.

Yummmy... gotta have it..


I had planned on making this soup of yours for awhile and it looks like today is the day. I am going to serve it with a fish pie which is a typical British meal but I've never made one before so I'll let you know how it all turns out.


I thought the soup was very good but it needs a bit of pizazz so I think when I make it next time I will add garlic and perhaps some potatoes to the mixture.
