Ingredients
  • 2 1/2 cups short pasta shapes
  • 1 tbsp olive oil
  • 4 tbsp heavy cream
  • salt
  • SAUCE:
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 small red pepper, cored, seeded and chopped
  • 1 clove garlic, chopped
  • 1 pound lean ground beef
  • 1 (5 oz) can chopped tomatoes
  • 1/2 cup dry white wine
  • 2 tbsp chopped parsley
  • 1 (2 oz) can anchovies, drained and chopped....I LEAVE THESE OUT
  • salt and pepper
  • TOPPING:
  • 1 1/4 cup plain yogurt
  • 3 eggs
  • pinch of nutmeg
  • 1/2 cup parmesan cheese

Directions
  1. Sauce: heat the oil in a large skillet and fry the onion and the pepper for 3 minutes. Stir in the garlic and cook for 1 minute. stir and beef and cook, stirring frequently until all is browned.
  2. Add tomatoes and wine, stir well and bring to a boil. simmer, uncovered for 20 minutes or until the sauce is fairly thick. Stir in the parsley and anchovies and adjust the salt and pepper.
  3. Cook the pasta in boiling salted water with 1 tbsp olive oil added
  4. When almost tender, drain and transfer to a bowl. Stir in the cream and set aside
  5. Topping: beat together yogurt and eggs, season with nutmeg salt and pepper. Add parmesan cheese.
  6. Spray a 9 x 13 pan with cooking spray. Spoon in half the macaroni and cover with half the meat sauce. Repeat spreading the topping evenly over the dish and sprinkle with extra parmesean cheese.
  7. Bake in 375 degree oven for 25 minutes, until the topping is golden brown and bubbling.
