How to make it

  • Grease and line with parchment a 8 inch x 8 inch baking pan.
  • Place all ingredients (except vanilla) in a large saucepan (4qt minimum capacity.)
  • Bring ingredients to a boil stirring often.
  • Cook over medium heat while stirring until candy reaches 245 degrees F.
  • Remove from heat and stir in vanilla. Pour into lined baking pan.
  • Allow to cool completely. Snip into pieces using clean kitchen shears (or slice with a knife). Wrap individually with waxed or parchment paper. Makes ~100 pieces
  • Variation: Cook to 230 degrees F and add vanilla. Pour into a glass jar. Warm jar in a pan of hot water before pouring over ice cream or cake.

    Ran into some trouble with this recipe. Made it with almond milk (and I see someone posted below they have done this so I don't think that was the problem).

    Couldn't get the mixture to heat up above 230 without it boiling over the edge of the pot. Cooked it down and eventually got it to ~233 after at least 30-40 minutes of heating and stirring. When we cooled it, it was very watery and does not even taste like caramel. What did I do wrong??

    I love this recipe. It is very similar to the traditional caramel recipe I make every year. I have substituted coconut milk and have only added the milk fat instead of using soy. I always make a double batch and find that 4 cans of coconut milk is about equal measure to the 4 cups of soy milk. Thanks so much for sharing. I also look forward to trying chai caramels too.

    I am going to steep a tea bag in the milk and add a mixture of cardamom, cinnamon, clove, and ground ginger for chai tea caramels.

    We love this recipe. I have made it twice now - once with So Delicious Coconut Milk and today with Silk Pure Almond Milk. Worked great both times! We use either Fleschmanns Unsalted Margarine which is dairy free or Earth Balance Soy Free. It takes awhile for the water to cook out of the milks and the margarine but so worth it!

    Do you know if this will work with almond milk? We can't do dairy or soy around here due to a sensitive kiddo... would love love love to try it. I really miss caramel.

    They were really good. They are also more of a hard candy. I 'm not sure what went wrong, or if something went wrong. Back to the kitchen to make a more chewy vegan caramel. Thanks for the recipe!

    Hi! And thanks for sharing :) Do you know if you can make this using cashew nut cream as a base? (Just got a Vita-Mix and have been experimenting). I made some cashew cream for a roasted squash soup and thought it could be an AMAZING base for vegan caramel. But I have no idea how to make it :( Does anyone have any experience with this? Thanks! :)

    Florida Crystals is a brand of sugar that is unfiltered. The sugar has a light golden color but tastes the same. Beet sugar is not filtered with animal char. It's cane sugar that is.

    Yes, please read all the ingredients in both the soy milk and the margarine to make sure they are safe and appropriate for either those who are dairy-allergic or vegan. Another issue that concerns some vegans is the bone char used in processing sugar. You can find sugar labeled vegan or purchase organic sugar.     well actually, a lot of margarines have dairy products in them, making this not vegan.

    Throw it back on and keep stirring and cooking. It will take about 45 minutes from start to finish. The water has to evaporate and so that the mixture can cook down and the sugars can caramelize.

    I tried making these but I couldn't get the mixture to go above 212 F. How long do these generally need to heat for? After 20 minutes at 212 with no increase in temperature, I just gave up.

    I've never tried it with low fat milk but I doubt it'll be a problem since there is so much margarine. Let me know if it works out.
