Ingredients
  • 4 oz dried apricots (soak overnight)
  • 2 oz. Caster Sugaar
  • Squeze of Lemon Juice
  • 1/4 Pint Whipping Cream
  • 1/4 Pint Natural Yoghurt
  • Small amount of Flaked Almonds
  • OPTIONAL / 1 Tablespoon Apricot Brandy

Directions
  1. Cook Fruit in a little water until Tender
  2. Strain - Liquidise and then cool
  3. Whisk 1/4 pint of Whipping cream
  4. Fold into Fruit with 1/4 pint Natural Yoghurt
  5. Add - if desired - 1 Tablespoon Apricot BrandyServe into small glass dishes
  6. Serve topped with Flaked Almonds
