White Chicken Pizza Recipe

	Recipeguru / All my dishes 7 months, 2 weeks ago I discovered that a pesky tomato allergy should/could/would NOT kill my love for pizza! (Amazingly enough, it's also a big hit when it's snack time for my great-nieces, ages 8, 6, and 5) I just made this a couple nites ago..so I'm trying to recreate it from memory! ... Ingredients

Chicken breast (grilled or broiled), chopped

1 T olive oil

1/2 c. onion, chopped

1/4 c. bell pepper, chopped

1 tsp. crushed garlic

your favorite mushrooms (chopped or sliced)

handful of olives

Cheeses: (I like to buy the Italian or Pizza blend, but you can add your favorites)

3 T Ragu alfredo sauce (or use your favorite recipe; more if you want)

thick slices of Italian bread

Directions

Preheat oven to 425 degrees.

Add olive oil to non-stick skillet and heat until it's hot, but not smoking. Over medium-high heat:

Add the onion & bell pepper & saute until soft.

Add the garlic, mushrooms, & olives. Heat. Reduce heat to very low.

Spread the alfredo sauce over the Italian bread

Arrange the chopped chicken breast on the bread, then add your sautee'd vegetables.

Add more cheese.

Bake for about 10 minutes, or until the cheese is nicely melted.

Serve with a nice green salad.

This recipe can be easily converted if you need to make more than one serving; I actually think my measurements are more along the lines of being for 2 anyway. (also works just as well with pepperoni which tends to be a little salty for my tastes.)

Also, any of your favorite pizza toppings can be added. (I'm experimenting with pineapple & possibly turkey sausage this weekend!)
