How to make it

  • Preheat oven to 425 degrees.
  • Add olive oil to non-stick skillet and heat until it's hot, but not smoking. Over medium-high heat:
  • Add the onion & bell pepper & saute until soft.
  • Add the garlic, mushrooms, & olives. Heat. Reduce heat to very low.
  • Spread the alfredo sauce over the Italian bread
  • Arrange the chopped chicken breast on the bread, then add your sautee'd vegetables.
  • Add more cheese.
  • Bake for about 10 minutes, or until the cheese is nicely melted.
  • Serve with a nice green salad.

    This recipe can be easily converted if you need to make more than one serving; I actually think my measurements are more along the lines of being for 2 anyway. (also works just as well with pepperoni which tends to be a little salty for my tastes.)

    Also, any of your favorite pizza toppings can be added. (I'm experimenting with pineapple & possibly turkey sausage this weekend!)
