What a terrific way to use your turkey leftovers in a delicous way that your entire family will love. You can freeze the casserole too. It's GREAT!

I love wild rice and I love casseroles. There won't be any turkey around the house until fall. I'm thinking about trying this with chicken. Wadda ya think?

I think it would be just as delicious with chicken and well worth a try! Let me know. Also, I have a beef and wild rice casserole that I have shared that is WONDERFUL, so try that too. You may like that one even better if you like beef.

I made this tonight for friends while we watched "Wipeout" - a new favorite. It was a HIT! 6 gay men devoured the whole pan! I added about 1 cup of low-fat mayo to the soup because I thought it wouldn't be enough. It was SO good! Thanks!
