Cornmeal Mush Recipe
Yummy alternative to a hot rice cereal or grits. Can even make fried cornmeal patties. Yummy!

Ingredients
  • 4 cups water
  • 1 cup cornmeal
  • Salt - to taste
  • Butter - to taste
  • Milk - to taste

Directions
  1. Bring 3 cups of water to a boil.
  2. Combine remaining cup of water with cornmeal.
  3. Whisk cornmeal mixture to boiling water.
  4. Add salt.
  5. Whisk until it comes back to a boil then turn heat to low.
  6. Cover and cook for about 30 minutes.
  7. Serve with butter and milk - or grease inside of tall glass and pack with cornmeal, chill or refrgerate until rcold. Slice chilled cormeal into 1-inch thick rounds and fry in butter until crips on both sides.

As a northerner I grew up on cornmeal mush....fried is the best! I'd always heard about grits. Had no clue what they were, but how could anything "gritty" be good? What a hoot that cornmeal mush and grits are kissin' cousins. Had shrimp & grits in Charleston, SC last October and am in love! Now grits (especially cheese grits) are a breakfast staple and when we visit SC I can't get my fill of shimp n' grits. Yum!
