Ingredients
  • Sliced crusty bread-French or Italian - cut on the diagonal
  • 2 medium thick slices Halloumi cheese
  • 1 medium thick slice ripe firm tomato
  • olive tapenade
  • *As with all simple dishes, the quality of the ingredients is key to the success of the recipe. Do get some good bread and ripe tomatoes and you will be halfway there before you even begin! A good storebought tapenade should not be too hard to find either. Then all you have to do is assemble and enjoy!

Directions
  1. Smear the tapenade lightly on the bread (a little goes a long way-very salty!)
  2. Place tomato on bread and top with cheese.
  3. Toast until cheese is melting and starts to brown.
  4. **if you have a toaster oven this would make an easy, satisfying snack.
  5. **this would also be very good to serve at an elegant supper as a starter or just with cocktails.

The Squesky cheese..hahaha..exellent!! Yep, I love making my own tapenade, so nice, this is a great snack or starter i think to any French or Italian or Turkish or Greek or anything come to think of it..lol..usually when I use Halloumi now I put it in a sealed container covered with a good olive oil, lots of dried oregano & basil & a few herbs de provence a leave it for about & week, great with any salad!...Lush..:-)) Nice One Softy..!!


This sounds wonderful and I would love this for my supper. Terrific post, can't wait to try it.

ok-
so i needed to eat something right away because i thought i was going to fall over and didn't have the energy to 'cook' anything, so i cheated and made myself a snack of this using a toasted english muffin and about 6 calamata olives roughly chopped.
i toasted the muffin and sprinkled the olives on each half- topped with sliced tomato and sliced haloumi and nuked in the microwave for about 2 minutes to melt the cheese...YUM!...
took all of 5 minutes and it was like eating a slice of realy good pizza straight out of the oven!
heaven!
