Bills Savory Potato Frittata

- 1/2 cup lentil or other sprouts shopping list
- 1/2 lb shredded potatoes shopping list
- 3 tbsp butter shopping list
- 1 tbsp bacon fat shopping list
- 3 tbsp olive oil shopping list
- 1/4 ea medium onion; diced shopping list
- 1 ea small clove garlic; mashed shopping list
- 1 ea jumbo egg or 2 small shopping list
- 1/2 cup buttermilk shopping list
- 1 tbsp parmesan cheese; grated shopping list
- 2 ea precooked bacon slices; cut crossways into 1/2 i shopping list
- salt and pepper shopping list
- pickled yellow banana pepper to taste; diced shopping list
How to make it
- Read all these instructions first before starting,
- Preheat convection oven (450 if you can adjust it).
- Start with a really big frying pan- 12 or 14 inches and turn up heat to
- high
- Heat butter, bacon fat and olive oil until melted
- Pour half off into a metal cup
- Add diced onions and garlic to pan
- Spread sprouts over onion-garlic mix
- Spread shredded potato over sprouts
- Sprinkle diced peppers over potato
- Season with a bit of salt and pepper
- If mix in danger of smoking or burning, turn down heat to medium
- Using a spatula, keep turning and stirring the mix for about 10 minutes.
- Add more of the oil mix if needed.
- Turn out half the combination and save for another purpose (potato soup?)
- Take a small aluminum pan - say 4x8 inches or so and line with wax paper
- Turn the rest of the combination onto the wax paper.
- Be sure to scrap the bottom of the pan and add all the yummy brown bits to the top of the ingredients in the aluminum pan.
- Sprinkle with bacon cuts.
- Add the rest of the oil mix over the combination.
- Blend the egg, buttermilk, more salt and pepper and the parmesan cheese in
- a blender for a couple of seconds to mix well.
- Pour over the combination ingredients in the aluminum pan.
- Bake in the convection oven for 5 minutes until the egg is set.
- Turn onto a serving plate and enjoy.
