How to make it

  • Read all these instructions first before starting,
  • Preheat convection oven (450 if you can adjust it).
  • Start with a really big frying pan- 12 or 14 inches and turn up heat to
  • high
  • Heat butter, bacon fat and olive oil until melted
  • Pour half off into a metal cup
  • Add diced onions and garlic to pan
  • Spread sprouts over onion-garlic mix
  • Spread shredded potato over sprouts
  • Sprinkle diced peppers over potato
  • Season with a bit of salt and pepper
  • If mix in danger of smoking or burning, turn down heat to medium
  • Using a spatula, keep turning and stirring the mix for about 10 minutes.
  • Add more of the oil mix if needed.
  • Turn out half the combination and save for another purpose (potato soup?)
  • Take a small aluminum pan - say 4x8 inches or so and line with wax paper
  • Turn the rest of the combination onto the wax paper.
  • Be sure to scrap the bottom of the pan and add all the yummy brown bits to the top of the ingredients in the aluminum pan.
  • Sprinkle with bacon cuts.
  • Add the rest of the oil mix over the combination.
  • Blend the egg, buttermilk, more salt and pepper and the parmesan cheese in
  • a blender for a couple of seconds to mix well.
  • Pour over the combination ingredients in the aluminum pan.
  • Bake in the convection oven for 5 minutes until the egg is set.
  • Turn onto a serving plate and enjoy.
