Curry Couliflower Soup Recipe
This is straight from Fit for Life, a wonderful guilt free soup that is just perect for those cold nights.

Ingredients
  • 2 Tbl butter
  • 1 Tbl olive oil
  • 1 medium onion, coarsely chopped
  • 6-8 scallions, chopped
  • 1 clove garlic, minced
  • 2 stalks celery, chopped
  • 2 med size cauliflower, cored and coursley chopped
  • 1/2 tsp sea salt
  • 1/2 tsp curry powder
  • 1/8 tsp fresh ground black pepper
  • 1/2 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp dried savory or marjoram
  • 6 cups water
  • 2 tbl vegetable bouillon (recipe calls for white miso to not turn soup dark, but vegetable bouillon works for me)
  • 1/8 tsp fresh ground nutmeg (optional) I always forget this

Directions
  1. In heavy soup kettle, melt butter
  2. Add oil, onion, scallions, and garlic
  3. Add celery and cauliflower
  4. Add seasonings, mix well and cook uncovered, over medium heat for serveral minutes, stirring frequently.
  5. Add water and bouillon, bring to boil.
  6. Simmer, covered, over medium heat for 15 min or until cauliflower is tender.
  7. Remove cover and cool slightly.
  8. Puree in small increments in blender. Howerver, I use a Bosch hand stick thingy which perfectly purees without having to transfer the hot soup. And this allows me to keep the soup a bit chunkier. But puree to creamy is still good and should be tried to taste.
  9. Add fresh nutmeg, reheat as needed and serve.
