Curry Couliflower soup

- 2 Tbl butter shopping list
- 1 Tbl olive oil shopping list
- 1 medium onion, coarsely chopped shopping list
- 6-8 scallions, chopped shopping list
- 1 clove garlic, minced shopping list
- 2 stalks celery, chopped shopping list
- 2 med size cauliflower, cored and coursley chopped shopping list
- 1/2 tsp sea salt shopping list
- 1/2 tsp curry powder shopping list
- 1/8 tsp fresh ground black pepper shopping list
- 1/2 tsp dried thyme shopping list
- 1 tsp dried basil shopping list
- 1 tsp dried savory or marjoram shopping list
- 6 cups water shopping list
- 2 tbl vegetable bouillon (recipe calls for white miso to not turn soup dark, but vegetable bouillon works for me) shopping list
- 1/8 tsp fresh ground nutmeg (optional) I always forget this shopping list
How to make it
- In heavy soup kettle, melt butter
- Add oil, onion, scallions, and garlic
- Add celery and cauliflower
- Add seasonings, mix well and cook uncovered, over medium heat for serveral minutes, stirring frequently.
- Add water and bouillon, bring to boil.
- Simmer, covered, over medium heat for 15 min or until cauliflower is tender.
- Remove cover and cool slightly.
- Puree in small increments in blender. Howerver, I use a Bosch hand stick thingy which perfectly purees without having to transfer the hot soup. And this allows me to keep the soup a bit chunkier. But puree to creamy is still good and should be tried to taste.
- Add fresh nutmeg, reheat as needed and serve.
