How to make it

  • In heavy soup kettle, melt butter
  • Add oil, onion, scallions, and garlic
  • Add celery and cauliflower
  • Add seasonings, mix well and cook uncovered, over medium heat for serveral minutes, stirring frequently.
  • Add water and bouillon, bring to boil.
  • Simmer, covered, over medium heat for 15 min or until cauliflower is tender.
  • Remove cover and cool slightly.
  • Puree in small increments in blender. Howerver, I use a Bosch hand stick thingy which perfectly purees without having to transfer the hot soup. And this allows me to keep the soup a bit chunkier. But puree to creamy is still good and should be tried to taste.
  • Add fresh nutmeg, reheat as needed and serve.
