Seasonal French Pears Baby Salad Greens Toasted Pine Nuts With Gorgonzola

- 1/3 cup pine nuts (also called pignoli) shopping list
- 2 French pears, thinly sliced shopping list
- 1 pound baby mixed greens shopping list
- 1/4 lb. gorgonzola shopping list

- Dressing shopping list
- ---------------------- shopping list
- 1 tablespoon shallots, chopped shopping list
- 1 1/2 tablespoons Dijon mustard shopping list
- 2 tablespoons honey shopping list
- 1/3 cup chopped tarragon shopping list
- 1/4 cup red wine vinegar shopping list
- salt & freshly ground pepper shopping list
- 2/3 cup olive oil shopping list
- PREP WORK Chop the shallots and tarragon. Assemble the rest of the ingredients together shopping list
How to make it
- DRESSING

- Combine all the ingredients except the oil into a small mixing bowl.
- Slowing drizzle in the oil while whisking until you have a smooth consistency.

- Toast the pine nuts in a pan over medium heat. The pine nuts have a high fat content so be careful not to burn them.
- Combine the baby greens, pine nuts, gorgonzola and dressing in a large salad bowl and mix.
- Serve on individual salad plates and top the each plate with slices of pear.
