How to make it

  • Heat oil in large skillet or saucepan over medium-high heat.
  • Add onion and cook until it begins to soften – about 3 minutes.
  • Add garlic, pepper, carrot, and celery. Cook another 5 minutes, or until vegetables start to soften.
  • Add quinoa, broth, bay leaf, lemon juice and zest.
  • Bring to a boil, then reduce heat to medium-low.
  • Cook covered for about 20 minutes, or until liquid is absorbed.
  • Stir in peas and season with salt and pepper.

    I can't wait to try this. I've been using quinoa quite a bit in the last year and like it better than couscous.
