Quinoa Pilaf

- 2 tbsp. olive or canola oil shopping list
- 1 small onion, chopped shopping list
- 3 cloves garlic, minced shopping list
- 1 red pepper, chopped shopping list
- 1 c. chopped carrot (about 2 – 3 med. or 6 – 7 baby carrots) shopping list
- 2 ribs celery, chopped shopping list
- 2 c. quinoa, rinsed shopping list
- 4 c. chicken or vegetable broth shopping list
- 1 bay leaf shopping list
- 1 – 2 tbsp. lemon juice shopping list
- 1 – 2 tbsp. lemon zest shopping list
- 1 c. frozen peas, thawed shopping list
- salt & pepper to taste shopping list
How to make it
- Heat oil in large skillet or saucepan over medium-high heat.
- Add onion and cook until it begins to soften – about 3 minutes.
- Add garlic, pepper, carrot, and celery. Cook another 5 minutes, or until vegetables start to soften.
- Add quinoa, broth, bay leaf, lemon juice and zest.
- Bring to a boil, then reduce heat to medium-low.
- Cook covered for about 20 minutes, or until liquid is absorbed.
- Stir in peas and season with salt and pepper.
