How to make it

  • Prepare muffin tins (either greased or paper liners)
  • In bowl, combine oatmeal, bran cereal, salt
  • Pour boiling water over mixture, stir, until combined
  • Stir in *1 cup* buttermilk, prunes, cranberries, set aside
  • In medium bowl, whisk together sugar, egg, oil
  • Add oatmeal mixture
  • In large bowl, stir together flour, baking soda and cinnamon.
  • Pour bran mixture and the other *1/2 cup* buttermilk into flour mixture, stir lightly just until combined
  • Pour into prepared muffin tins
  • Bake at 375 degrees 18-20 minutes
