Ginger Beef Stir Fry Recipe

This is incredibly easy yet so incredibly tasteful. You can't go wrong with this one and it's very healthy on top of that. Yummy.

  • 8 ounces beef top round steak
  • 1/2 cup beef broth
  • 3 tablespoons reduced-sodium soy sauce
  • 2-1/2 teaspoons cornstarch
  • 1 teaspoon sugar
  • 1/2 teaspoon grated fresh ginger
  • Nonstick cooking spray
  • 12 ounces asparagus spears, trimmed and cut into pieces
  • 1-1/2 cups sliced fresh mushrooms
  • 1 cup small broccoli flowerets
  • 4 green onions, bias-sliced into 1-inch lengths (1/2 cup)
  • 1 tablespoon cooking oil
  • 2 cups hot cooked rice

Directions
  1. Trim fat from beef.
  2. Partially freeze beef; thinly slice across the grain into bite-size strips.
  3. Set aside.
  4. For the sauce, in a small bowl stir together the beef broth, soy sauce, cornstarch, sugar, and ginger.
  5. Set aside.
  6. Lightly coat a cold wok or large skillet with cooking spray.
  7. Preheat over medium-high heat.
  8. Add asparagus, mushrooms, broccoli, and green onions.
  9. Stir-fry for 3 to 4 minutes or until vegetables are crisp-tender.
  10. Remove from wok or skillet.
  11. Carefully add the oil to wok or skillet.
  12. Add beef then stir-fry for 2 to 3 minutes or until desired doneness.
  13. Push the beef from center of wok or skillet.
  14. Stir sauce then add to the wok or skillet.
  15. Cook and stir until thickened and bubbly.
  16. Return vegetables to wok or skillet.
  17. Stir all ingredients together to coat with sauce then heat through.
  18. Serve immediately with hot cooked rice.

I will be trying this tonight!


I didn't have any mushrooms or asparagus so I substituted with basic frozen peppers, onions, Broccoli and Cauliflower (: It tastes great! I also added about a half tsp of fresh ground pepper, two drops of honey and a dash of lemon juice to the sauce. ^_^ I can't help but experiment with new recipes, I never have it the way it's supposed to be!
