How to make it

  • in a large soup kettle, saute onions in 1/4 cup of oil-over medium heat, till caramelized (about 8-10 minutes
  • add carrots and 1 Tbs. ginger,stiring to coat carrots, for 3 minutes
  • add stock and remaing ginger-bring to a boil,reduce heat and simmer for 30 minutes, and carrots are soft
  • puree in batches and return to pot
  • add remaining Tbs. oil,orange juice,crystallized ginger,salt,maple syrup and lemon juice
  • heat on low ( don't boil ) serve when ready
