Black Beans With Ham Hockscilantro And Lime

- 1# black beans,picked over and rinced shopping list
- 12 cups water shopping list
- 1 smoked hock shopping list
- 1 green pepper,stemmed and seeded, and quartered shopping list
- 1 medium onion, minced shopping list
- 6 cloves of garlic, minced shopping list
- 2 bay leafs shopping list
- 1 1/2 tsp. salt shopping list

- sofrito: shopping list
- 2 Tbs. olive oil shopping list
- 1 medium onion, minced shopping list
- 1 small green pepper stemmed,seeded and minced shopping list
- 8 cloves of garlic, minced shopping list
- 2 tsp. dried oregano shopping list
- 3/4 tsp. salt shopping list
- 1 1/2 tsp. ground cumin shopping list

- 1 Tbs. fresh lime juioe shopping list
- 1/2 cup chopped cilantro shopping list
- fresh ground black pepper shopping list
How to make it
- For beans:
- put first 8 ingerdients in a heavy soup kettle or dutch oven,bring to a boil over medium-high heat,lower heat to low and simmer for 2 hours,skimming surface scum as needed.add water if needed to keep beans covered
- remove hock and set aside to cool enough to handle
- remove bones and skin( I like the skin so I keep it) cut meat into bite size pieces and set aside

- for sofrito:
- heat oil in a large skillet over medium heat
- add first 7 ingredients, saute until soften,about 8-10 minutes
- add cumin and cook 1 minute longer

- to finish dish:
- scoop 1 cup of beans and 2 scoups of cooking liquid into pan with sofrito
- mash beans with a patato masher or a fork, until smooth
- simmer until liquid is reduced and thickened, about 6 minutes
- return sofrito to beans and simmer until beans are creamy and liquid thickens to sauce consistency, about 15 minutes
- add lime juice, simmer 1 minute longer
- stir in celantro, adjust salt and pepper and serve hot over fluffy rice
