actually I don't use bok choy all the time,
sometimes I use mushrooms, cabbage, kale, spinach or onion, spring onion, depends on what I have at the moment, hahaha
for mushrooms I like shitake, cinamon cap, oyster mushrooms, sometimes I mix few kinds of mushrooms, add more ground pepper when you're using mushrooms :)

Maybe substitute kale or spinach? and also add mushrooms. Great post. I make stir fry once a week, would like to make it more but you know I have to think of the other two family members :)
