I got this recipe from one of my favorite Madison restaurants - the cookie part of an ice cream cookie sandwich. I think they must have lost the cook who would make these because it hasn't been on the dessert menu in years.

Ingredients
- 1 1/2 cups old-fashioned oatmeal
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 1 Tbsp vanilla
- 3/4 cup peanut butter
- 2 large eggs
- 12 oz semi-sweet chocolate chips
- 8 oz semi-sweet grated chocolate
Directions
- Pulse 1 cup of the oatmeal in a food processor until fine. Stir remaining dry ingredients together.
- Beat butter and sugar until fluffy. Add vanilla and peanut butter. Add eggs one at a time. Gradually add flour mixture. Add all chocolate and stir until just mixed. Chill at least 2 hours.
- Bake at 325 degrees for 10-15 minutes, depending on size of cookie.
- Perfect for ice cream sandwiches!

The cookies turned out awesome I just had to cook them a little extra! My husband is a huge fan of peanut butter and chocolate and I brought these to church and they all went fast! It seems like a lot of chocolate at first but the batter is so think that when they're done they work out well, also I wouldn't have thought about grating some of the chocolate chips and I think this added a lot to the cookie!
