How to make it

  • Pulse 1 cup of the oatmeal in a food processor until fine. Stir remaining dry ingredients together.
  • Beat butter and sugar until fluffy. Add vanilla and peanut butter. Add eggs one at a time. Gradually add flour mixture. Add all chocolate and stir until just mixed. Chill at least 2 hours.
  • Bake at 325 degrees for 10-15 minutes, depending on size of cookie.
  • Perfect for ice cream sandwiches!

The cookies turned out awesome I just had to cook them a little extra! My husband is a huge fan of peanut butter and chocolate and I brought these to church and they all went fast! It seems like a lot of chocolate at first but the batter is so think that when they're done they work out well, also I wouldn't have thought about grating some of the chocolate chips and I think this added a lot to the cookie!
