How to make it

  • Preheat the oven to 325F.
  • Place the scallops on a baking tray.
  • Drizzle each one with a little olive oil and a dash of brandy.
  • Place in the oven for 10-12 minutes.
  • Arrange four scallops on each plate and sprinkle with a little chopped parsley.
  • Serve with some crusty bread to mop up the juices inside the shells.
