Ingredients

Cooking spray

1-lb boneless, skinless, chicken breasts, cut into strips and then halved

2-cups your frozen stir veggie mix, thawed

1-cup frozen cut okra, thawed

3/4-cup thinly sliced celery

3/4-tspn sugar

1/2-tspn salt

1/2-tspn dried thyme

1/4-tspn ground red pepper

1 (14.5-oz)can diced tomatoes, undrained

½-palm dried parsley flakes

1-tbspn butter

Directions

Heat a large nonstick skillet over medium-high heat.

Coat pan with cooking spray.

Add chicken; then cook about 5 minutes on each side or until browned.

Add pepper stir-fry and next six ingredients, stirring to combine. Pour tomatoes over chicken mixture; brin to a boil.

Cover, reduce heat, and simmer 10 minutes.

Uncover; cook for 5 more minutes.

Add parsley and butter, stirring until butter melt.

I served this over white rice. -
