Ingredients
  • 1 lb fully cooked sausage, cut in to 1/2inch slices
  • 1 medium onion, chopped
  • 1 medium green bell pepper, cut into 1inch chunks
  • 1 can (14 1/2 oz.) diced tomatoes, undrained
  • 1/2 cup beef broth
  • 1 TBL brown sugar
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1 can (20 oz.) unsweetened pineapple chunks
  • 2 TBL cornstarch
  • Hot Cooked Rice

Directions
  1. In a skillet, cook the sausage, onion, and green pepper until the sausage is lightly browned; drain.
  2. Add tomatoes, broth, brown sugar, garlic powder, and pepper.
  3. Drain Pineapple, reserving juice.
  4. Stir pineapple into sausage mixture. Bring to a boil uncovered for 5 minutes.
  5. Combine cornstarch and reserved juice until smooth; gradually add to sausage mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice.
  6. ENJOY!!!

I made this about a week ago and I loved it. The only thing I did different was I used crushed pineapple because I'm not a real huge fan of the chunks with my meat. It's just a cute little quirk that I have but thanks again for the post.


I did this earlier with chicken sausage. it was definitely yummy. your picture shows not much sauce so i might have put in a lot on mine.hehehe

I will try it tonight, husband is a hunter. We have way to much sausage in the freezer, we are trying new receipes to change things up.


It was very good, thank you. My husband said it could of been more saucey like spagehetti sauce.. guess you can not please everyone.


I made this with beef kielbasa last night and everyone in my family loved it! I'm definitely adding this to my list of "regulars." It was easy, colorful, tasty, and a great new way for me to cook sausage! Thanks for sharing this. :)

Alterations


I dont know how to edit my own recipe so I will add it here. I am not big on chucks of onion but I love the flavor. So instead of cutting an onion I use dehydrated onions.
