Dipped Gingerbread Cookies Recipe
These are sooo good with a hot cup of tea.

Ingredients
  • 2 C sugar
  • 1 ½ C oil
  • 2 eggs
  • ½ C molasses
  • 4 C flour
  • 4 tsp baking soda
  • 1 Tbl ground ginger
  • 2 Tsp cinnamon
  • 1 tsp salt
  • Additional sugar
  • 2 12 ounce pkg white baking chips
  • ¼ C shortening

Directions
  1. Combine sugar, oil & eggs; mix well
  2. Stir in molasses.
  3. Combine dry ingredients and add to creamed mixture and blend well
  4. Shape into ¾ inch balls and roll in sugar
  5. Place 2” apart on ungreased cookie sheets
  6. Bake at 350 for 10-12 mins. or until cookie springs back when touched
  7. Cool
  8. Melt chips and shortening together in small saucepan
  9. Dip cookies ½ way , shake off excess
  10. Place on wax paper lined sheets or racks until set
