Mediterranean Pasta Recipe
Yummy Mediterranean flavors fill this pasta dish that I like to serve with a simple salad with oil and vinegar dressing

Ingredients
  • 1 lb penne pasta
  • 1 can Italian style tomatoes
  • 1 can regular tomatoes
  • 1 purple onion, chopped
  • 1 can chopped black olives
  • 1 or 2 cans artichoke hearts, chopped roughly
  • feta cheese
  • parmesean cheese

Directions
  1. Boil pasta according to directions...be careful to not overcook!!
  2. saute onions in a little olive oil for about 3 minutes
  3. add tomatoes, olives and artichokes and cook for 5 minutes
  4. put pasta in a casserole dish and sprinkle with half of the parmesean and feta cheeses
  5. pour tomato mixture over pasta and cheese and top with remaining cheeses
  6. bake at 350 for 20-30 minutes or until bubbly
