Puerto Rican Egg Nog Coquito Recipe
I saw a variation of this on Emeril. I did some research and came up with this easier version. So tasty, and no raw eggs!

Ingredients
  • 2 cans coconut cream (or coconut milk)
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1 teaspoon vanilla extract
  • 1-2 cup rum
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg

Directions
  1. Blend all ingredients in a blender on high for 5 minutes.
  2. Refrigerate.
  3. Serve cold, sip and enjoy.

Now I can go for this one, I love eggnog but don't like the thought of using raw eggs anymore. Thanks for the great post, will bookmark this one to try. Happy New Year.
