Cajun Catfish Supreme Recipe

Ingredients

1 1/2#s catfish filets, cut in strips

2 tsp. cajon blackened seasoning

4 Tbs. mayonnaise

1/2 cup butter

1 cup sliced mushrooms

1 cup sliced green onions

1/2 cup fresh parsley-chopped

1 # small,peeled shrimp

2 (10.75 ounce) cans of condenced cream of shrimp soup

Directions

sprinkle catfish strips with seasoning

spread with mayonnaise,place in a shallow dish and cover and refrigerate for 1 hour

in a large skillet,heat 4 Tbs. of butter until it sizzles

sear fish until golden turning once

transfer to a 9 x 13 inch baking dish,in a single layer

heat remaining butter in the skillet,over medium heat and cook mushroom ti golden

stir in parsley,green onions and shrimp

cook till shrimp are pink and tender

stir in soup and blend well

ladle over fish and bake at 375*F. for 30 minutes

serve with rice and cornbread
