Ingredients
  • 1 can of pineapple chunks
  • 1/2 lb of pork, cut into 1/2 inch strips
  • 1 tbsp sesame oil
  • 3/4 c thin sliced red peppers
  • 3/4 c chopped carrot
  • 2 green onions, chopped
  • 3 tbsp soy sauce
  • 3 tbsp teriyaki sauce
  • 1 tbsp peanut butter
  • 1/4 c dry, unsalted roasted peanuts, finely chopped

Directions
  1. drain pineapple, reserving juice, set aside
  2. in skillet, stir fry pork in oil until no longer pink
  3. add pepper, carrot and onions, cook and stir for 2-3 mins til crispy/tender
  4. stir in sauces, peanut butter and juice, bring to a boil
  5. cook and stir for 2 or so mins until thickened
  6. stir in peanuts and pineapple
  7. serve with rice
