How to make it

  • drain pineapple, reserving juice, set aside
  • in skillet, stir fry pork in oil until no longer pink
  • add pepper, carrot and onions, cook and stir for 2-3 mins til crispy/tender
  • stir in sauces, peanut butter and juice, bring to a boil
  • cook and stir for 2 or so mins until thickened
  • stir in peanuts and pineapple
  • serve with rice
