Easy burritos with a cooling salsa

  • Pineapple Salsa
  • 1 (8 oz.) can pineapple tidbits,drained.
  • 1/2c finely chopped red pepper
  • 1Tbs. brown sugar
  • 1Tbs.cider vinegar
  • Burritos
  • 3 boneless skinless brest halves,cut into bite size strips
  • 2tsp. chili powder
  • 2tsp oil
  • 1(16 oz.)can refried beans
  • 8(10")flour tortillas
  • 1c.shreaded lettuce
  • 1c chopped tomato

Directions
  1. In a small bowl,combine all salsa ingredients;mix well. Refrigerate till serving
  2. In med bowl,combine chicken strips and chili powder;toss to coatevenly. Heat oil in lg. skilletover med. heat until hot. Add chicken;cook and stir 4-5 mins. or until chicken is no longer pink. Add refried beans;cook 2 mins. or until mixture is hot,stirring frequently.
  3. Spoon about 1/3c chicken mixture onto each tortilla. Top with 2 Tbs.lettuce and 2Tbs tomato. Fold bottom of tortilla up over filling;fold sides in towards center,overlapping. Fold down top. Serve with pineapple salsa.
