Sausage Potato Lasagna Recipe
I made this while doing the adkins diet. It is good no matter what though. This could be a really great brunch meal. Of coarse I will always love my traditional lasagna but this is a nice change too.

Ingredients
  • 1 pound Italian ground italian sausage
  • 2 cups mushrooms sliced
  • 4 medium potatoes peeled and thinly sliced
  • 10 oz frozen spinach thawed and squeezed
  • 1/2 cup ricotta
  • 1/4 cup grated parmesan
  • 1 egg beaten
  • 1 med onion chopped
  • 2 minced garlic cloves
  • 2 T butter
  • 2T flour
  • 1 1/2 cups milk
  • 1 cup shredded mozzarella

Directions
  1. Preheat oven to 350
  2. Brown sausage with muchrooms. Drain.
  3. In saucepan boil poratoes util tender and crisp. Drain
  4. In saucepan saute onion and garlic in butter until tender.
  5. Stir in flour. Add salt and pepper to taste.
  6. Gradually add milk, cook and stir until thick.
  7. In 7X11 pan layer ingredients.
  8. Sprinklw with remaining mozzeralla.
  9. Cover and bake 30-35 minutes. Uncover the last 5 minutes.
