Spinach Beef Crepes With Sauce And Cheese Recipe

Ingredients
  • Crepes:
  • 2 eggs, beaten well
  • 2/3 cup milk
  • 1/2 cup flour, sifted
  • 1 tbls melted butter
  • Pinch of salt
  • Combine all ingredients and beat together well
  • On medium high heat, ladle a small ladle full of batter into a small buttered skillet.
  • Tilt skillet around to make crepe as thin as possible
  • Cook until done on one side only
  • Slide onto parchment paper and proceed with the next one.
  • Makes about 12.
  • Filling:
  • 1 10 oz pkg frozen chopped spinach
  • 1/2 lb hamburger
  • 2 tbls minced onion
  • salt and pepper to taste
  • 1 medium tomato, peeled and chopped
  • 1/2 cup grated cheddar cheese
  • Let spinach thaw and drain all water out.
  • Brown hamburger and onion and drain off fat
  • Add remaining ingredients, including spinach, except sauce and mix well
  • Cook over low heat for 5 minutes to heat through
  • Put about 1/4 cup of filling onto cooked side of crepe
  • Roll up and put seam skde down in a buttered baking dish
  • Top with sauce (recipe follows) and bake @350 for 30 minutes
  • Sauce
  • 2 tbls. butter
  • 2 tbls. flour
  • salt to taste
  • 1 cup milk
  • 1/4 cup parmesan cheese
  • Melt butter in small saucepan
  • Stir in flour, salt and milk.
  • Cook, stirring until sauce thickens.
  • Pour over crepes and sprinkle with cheese

Wow a bit of work but worth the time spent I think,
could one make the creapes and filling the day before or would it be better on the day?
