Ingredients
  • 1 pound ground beef
  • 1 jar ( 12 oz) chunky salsa
  • 1 cup frozen corn, thawed & drained
  • 3/4 cup Miracle Whip
  • 1 tablespoon Chili powder
  • 2 cups crushed tortilla chips
  • 2 cups shredded Colby / Monterey Jack cheese, divided

Directions
  1. Pre-heat oven to 350ยบ. Brown meat, drain.
  2. Stir in salsa, corn, miracle whip & chili powder.
  3. Layer half of the meat mixture in a 2 quart casserole
  4. Add crushed chips, half of the cheese.
  5. Repeat layers, ending with cheese
  6. Bake 20 minutes or until thoroughly heated through and cheese is melted.
  7. Top with shredded lettuce and chopped tomatoes if desired. ( I don't do that, I prefer to serve a salad separately ). Serves 6.
