Ingredients
  • 3 slightly beaten eggs
  • 2 cups milk (we used 1% but whole is implied in the recipe)
  • 1 1/2 cups cooked rice
  • 1/2 cup sugar
  • 1/2 cup raisins
  • 1 teaspoon vanilla
  • ground cinnamon

Directions
  1. In bowl, combine eggs, milk, rice, sugar, raisins, vanilla, and 1/2 teaspoon salt; mix well.
  2. Bake in 10 x 6 x 2 inch baking dish at 325 for 25 minutes. Stir. Sprinkle with cinnamon.
  3. Continue baking till knife inserted halfway between center and edge comes out clean, 20 to 25 minutes longer (because of the 1% milk, we wound up cooking it about 40 minutes the second time. Do the "jiggle test" for custards if you're unsure).
  4. Serve warm or chilled with light cream, if desired.
