Marthas Xmas Rice

- 3 slightly beaten eggs shopping list
- 2 cups milk (we used 1% but whole is implied in the recipe) shopping list
- 1 1/2 cups cooked rice shopping list
- 1/2 cup sugar shopping list
- 1/2 cup raisins shopping list
- 1 teaspoon vanilla shopping list
- ground cinnamon shopping list
How to make it
- In bowl, combine eggs, milk, rice, sugar, raisins, vanilla, and 1/2 teaspoon salt; mix well.
- Bake in 10 x 6 x 2 inch baking dish at 325 for 25 minutes. Stir. Sprinkle with cinnamon.
- Continue baking till knife inserted halfway between center and edge comes out clean, 20 to 25 minutes longer (because of the 1% milk, we wound up cooking it about 40 minutes the second time. Do the "jiggle test" for custards if you're unsure).
- Serve warm or chilled with light cream, if desired.
