Pesto Chicken Breasts With Summer Squash Recipe
This is so light and so flavorful. I make it often and it is always a big hit. Hope you enjoy as much as we do.

Ingredients
  • 4 medium skinless boneless chicken breast halves
  • 1 tablespoon olive oil
  • 2 tablespoons pesto
  • 2 cups finely chopped zucchini and/or yellow summer squash
  • 2 tablespoons finely shredded Asiago cheese

Directions
  1. In a large nonstick skillet cook chicken in hot oil over medium heat for 4 minutes.
  2. Turn chicken then add zucchini and/or squash.
  3. Cook 6 minutes more stirring squash gently once or twice.
  4. Transfer chicken and squash to 4 dinner plates.
  5. Spread pesto over chicken then sprinkle with Asiago.
