How to make it

  • Cut an 8 inch square double thickness of cheesecloth.
  • Put cinnamon sticks, cloves and ginger slices in the middle and bundle it into a bag and tie up with kitchen twine.
  • In a large sauce pan, combine the orange juice, raisins, brown sugar.
  • Add the spice bag, salt and nutmeg.
  • Bring to a boil.
  • Reduce heat and simmer for 10 minutes.
  • Add fruit and brandy/Cointreau and simmer for less than five minutes, just enough to heat the fruit thoroughly..
  • Discard spice bag and serve fruit warm.

  • *in a dish topped with whipped cream and granola or crushed ginger snaps as a dessert*
