Cold Asparagus with Lemon Mustard Dressing

- 12 fresh asparagus spears shopping list
- 2 tablespoons fat-free mayonnaise shopping list
- 1 tablespoon sweet brown mustard shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1 teaspoon grated lemon peel, divided shopping list
How to make it
- Take the asparagus and steam them until their texture is crisp-tender and they are bright green. Immediately drain the asparagus and rinse them under cold water, then cover and refrigerate until they are chilled.
- In a small bowl combine the mayonnaise with the mustard and lemon juice and blend the mixture well, then stir in ½ teaspoon of lemon peel and set aside.
- Take the chilled asparagus and divide it between 2 plates, then spoon 2 tablespoons of lemon-mustard dressing over the top of each serving, and sprinkle ¼ teaspoon lemon peel over each serving. Garnish if desired.
