Warm Stuffed Dates Recipe
An easy appetizer that is terrific for cocktails or 5 course meals.

Ingredients
  • Warm Stuffed Dates
  • Makes 36 pieces
  • 18 Medjool dates
  • 3 oz. Mascarpone cheese
  • 3 oz. goat cheese
  • 36 whole almonds, lightly toasted
  • 3 oz. Dry Coppa

Directions
  1. Preheat oven to 325*F
  2. Halve the dates and discard the pits.
  3. In a small bowl, mix together the Mascarpone and goat cheese until smooth.
  4. Pipe a small dollop of cheese mixture in each date half.
  5. Top with a whole almond.
  6. Wrap in a half slice of coppa.
  7. Secure with a toothpick, place on a ovenproof tray.
  8. Heat dates until just warmed through. About 5-10 minutes.

Now, I know I live under a rock. Had to look up 3 ingredients, BUT it took me on an interesting search, finding images of the ingredients and similar recipes. Will try this one day soon. Thanks!


Hi..I have a wonderful source for dates-www.Dateland.com in Dateland, AZ. Their jumbo medjools are ENORMOUS, sweet, and soft as butter. You can only get the jumbos in October ( I just ordered my 5 lb. box--I freeze them and use them all year) and I'm always looking for ways to eat them. Yummmm. Marscapone, chevre, and dates? To die for. Tell me--is dry Coppa some form of Italian cold cut?


Yes Coppa is an Italian salted then dry cured pork shoulder. Here is a description from Hormel Foods.
