How to make it

  • Preheat oven to 325*F
  • Halve the dates and discard the pits.
  • In a small bowl, mix together the Mascarpone and goat cheese until smooth.
  • Pipe a small dollop of cheese mixture in each date half.
  • Top with a whole almond.
  • Wrap in a half slice of coppa.
  • Secure with a toothpick, place on a ovenproof tray.
  • Heat dates until just warmed through. About 5-10 minutes.

    Yes Coppa is an Italian salted then dry cured pork shoulder. Here is a description from Hormel Foods.

    Hi..I have a wonderful source for dates-www.Dateland.com in Dateland, AZ. Their jumbo medjools are ENORMOUS, sweet, and soft as butter. You can only get the jumbos in October ( I just ordered my 5 lb. box--I freeze them and use them all year) and I'm always looking for ways to eat them. Yummmm. Marscapone, chevre, and dates? To die for. Tell me--is dry Coppa some form of Italian cold cut?

    Now, I know I live under a rock. Had to look up 3 ingredients, BUT it took me on an interesting search, finding images of the ingredients and similar recipes. Will try this one day soon. Thanks!
