- 1 corn tortilla, torn into small pieces shopping list
- 1 tbsp veg. oil shopping list
- 1 egg, whisked shopping list
- small bit of cooked meat (you may use any you like--I like to do this dish with any leftover taco meat) shopping list
- a little bit of jalapeno or salsa, to taste shopping list
- cheese, to taste shopping list
- salt and pepper, to taste shopping list
How to make it
- Heat vegetable oil in small skillet. Cook tortilla pieces until slightly golden and crunchy.
- Add cooked meat and jalapeno or salsa to tortillas crisps.
- After about a minute or two, add the egg. Cook until egg sets.
- Add cheese and let it melt in the food. Salt and pepper to taste.
- The recommendation is to serve this with warm flour tortillas and refried beans. However, this dish is good enough to eat as is.
