How to make it

  • In bowl whisk eggs
  • Whisk in cream, salt, and pepper
  • Over medium heat, in a nonstick pan, melt 2 tsp of butter
  • Pour in eggs
  • Cook, stirring constantly, until eggs are bright yellow and fluffy
  • Stir in remaining 1 tsp of butter
  • Add cheeses and scallion, mix well
  • Serve
