3-Cheese Scrambled Eggs

Great served along side fried fish and grits.
Ingredients
- 4 eggs shopping list
- 1/2 cup heavy cream shopping list
- salt and pepper - to taste shopping list
- 3 tsp butter shopping list
- 1/4 cup provolone cheese, shredded shopping list
- 1/4 cup monterey jack cheese, shredded shopping list
- 1/4 cup Mozzarella, shredded shopping list
- 6 - 8 scallions, chopped shopping list
How to make it
- In bowl whisk eggs
- Whisk in cream, salt, and pepper
- Over medium heat, in a nonstick pan, melt 2 tsp of butter
- Pour in eggs
- Cook, stirring constantly, until eggs are bright yellow and fluffy
- Stir in remaining 1 tsp of butter
- Add cheeses and scallion, mix well
- Serve
