Linguine With Chicken And Spicy Broccoli Recipe

Ingredients
  • 2 boneless, skinless Chicken Breasts
  • Drizzle of Olive Oil
  • Pinch of Garlic Powder
  • Salt & Pepper
  • 1 lb. Whole Wheat/Whole Grain Linguine
  • 1 tsp. Olive Oil
  • 1 large bunch Broccoli Florets
  • 2 cloves Garlic, minced
  • 1/4 tsp. Crushed Red Pepper Flakes
  • 1 14 oz. can Petite Diced Tomatoes
  • Fresh Parmesan cheese

Directions
  1. Drizzle chicken with olive oil and season with garlic powder, salt and pepper.Set aside for 15 minutes.
  2. Sautee chicken until cooked through, set aside.
  3. Cook pasta according to package directions.
  4. Heat oil in a heavy saucepan over medium heat. Sauté broccoli, garlic, and chili pepper flakes for about 1 minute.
  5. Add tomatoes. Season with salt and pepper.
  6. Cover saucepan and reduce heat to low. Simmer 7-8 minutes or until broccoli is bright green and tender and tomato sauce has thickened.(Add a little water if necessary.)
  7. Toss broccoli mixture with pasta.
  8. Slice chicken in thin slices.
  9. Serve chicken over top of pasta mixture.
  10. Top with freshly grated parmesan cheese.

I can't believe I never came across this recipe. Sounds really tasty. You could use any pasta I suppose, and I think I will add some sour cream. YUM
