Ginger Scallion Fish Recipe

Ginger Scallion Fish Recipe
I found this on the net. I haven't tried it yet, but there was a request for light dishes for after the holidays and at 121 calories, 2 g. fat and 3 g. of carbohydrates it would be a good one to help shed those holiday pounds.

Ingredients
  • 4 4-ounce fresh or frozen skinless sea bass or other firm-fleshed white fish fillets, ¾ to 1 inch thick
  • 2/3 cup thinly sliced scallions or green onions
  • 4 tsp. lemon juice or dry sherry
  • 2 tsp. grated fresh ginger
  • 2 cloves garlic, minced
  • 2 tsp. bottled fish sauce or reduced-sodium soy sauce
  • 1 small fresh jalapeno pepper, seeded and finely chopped

Directions
  1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. In a small bowl stir together scallions, 2 teaspoons of the lemon juice, the ginger, and garlic.
  2. Arrange fish fillets in a single layer in a microwave-safe shallow baking dish, tucking under any thin edges. Spoon scallion mixture over fish.
  3. Cover dish with vented plastic wrap. Microwave on 100-percent power (high) for 3 to 5 minutes or until fish flakes easily when tested with a fork, giving the dish a half-turn halfway through cooking.
  4. Using a slotted spatula, transfer fish to dinner plates. Stir together fish sauce, jalapeno pepper, and the remaining 2 teaspoons lemon juice; drizzle over fish.
