How to make it

  • preheat oven to 170 °CENTIGRADE
  • cut off about 1/2 cm from top of tomatoes
  • remove kernels and all the 'meaty' stuff from inside, leaving a casing of about 1/2 cm
  • salt inside and place upside down on paper towels
  • heat the olive oil in heavy skillet with medium heat
  • add onions and garlic,
  • until onions are 'glassy' but not brown
  • add bread crumbs, chopped anchovis and tuna (mashed with a fork into little bits)
  • cook about 1 or 2 minutes
  • remove skillet, add chopped parsley, capers and olives
  • if mixture is too dry, add more olive oil, it should not be 'crumbly'
  • fill tomatoes,
  • sprinkle tops with parmesan and a few drops of olive oil
  • place tomatoes in baking dish, lightly oiled
  • on medium rack in oven,
  • about 20 to 30 m inutes or until tomatoes are soft, but not 'mushy'
  • and the tops should be lightly browned.
  • the tomatoes can be served either hot or cool, sprinkled with some fresh parsley.

    You know, someone should tell Shirley to head to her closest farmer's market, or to buy the organic tomatoes that are still on the stems (at a health food market, or even a bigger chain grocery store). Those taste great, and I would be using those to make this recipe. It looks great, and I definitely will be trying it! Thank you!

    maybe i should fed-ex you some, shirley? or i'l fix them for you next time you come to good old germany :-)thank you *hugsandkisses' for the rating, hon. we already get lovely tomatoes which actually TASTE like tomatoes from somewhere in europe. not the watery hard stuff that looks like the real thing but isn't really. ah, yes, the wonders of modern-day living:-)
