Cajun Red Beans And Rice

- 6 cups water shopping list
- 1 pound dried kidney beans shopping list
- 4 Tablespoons butter shopping list
- 1 cup finely-chopped scallions (use tops) shopping list
- 1/2 cup finely chopped onions shopping list
- 1 rib celery; chopped shopping list
- 1 teaspoon finely chopped garlic shopping list
- 2 smoked ham hocks shopping list
- 1 pound andouille sausage ( italian sweet sausage is equally good) shopping list
- 1 teaspoon salt shopping list
- 1 bay leaf shopping list
- 1/2 teaspoon ground black pepper shopping list
- 1/8 to 1 teaspoon ground hot red pepper (to your own taste) shopping list
- 1 or 2 drops liquid hickory smoke shopping list
- 1/4 teaspoon cumin shopping list
- Drop beans in boiling water & boil briskly for 2 minutes. Turn off heat & let beans soak for 1 hour. shopping list
- Melt butter in large, heavy pot & cook scallions, onions, celery & garlic until soft but not brown. Stir in beans & their liquid, the ham hocks, the andouille sausage & the seasonings. Bring to boil then reduce heat & simmer partially covered for 3 hours or until beans are very soft & sauce is medium thick. (You may add more water, 1 cupful at a time,if needed. Stir frequently while simmering. shopping list
- Remove ham hocks & take all bits of meat off them & return this meat to the bean pot. Remove bay leaf. shopping list
- Serve with steaming rice. shopping list
