How to make it

  • In a food processor, reduce the Brie to cream (add a little light cream if needed) and, using a spatula, gently add the radish julienne. Set aside.
  • Mix the goat cheese with half the cream and set aside.
  • Dilute the gelatine in a bowl of cold water (follow directions) and set aside.
  • Slightly heat the rest of the cream and add the gelatine. (step 4)
  • Mix well and add mixture of goat cheese, pistachios and green pepper.
  • Cover the inside of a mould with plastic wrap and pour half the preparation obtained in step 4.
  • Place the Brie mixture in the middle of the terrine and cover with the rest of the preparation from step 4.
  • Cover with the plastic wrap and keep chilled for approximately 5 hours.
  • Unmould and serve two slices with bib lettuce seasoned with walnut oil dressing.

    This Cheese Terrine is wonderful I like best the green pepper in brine and of course Pistachios, radishes too. An attractive spread worthy of a High five and more.
