No-bake Cereal Cookies Recipe

Ingredients

2 eggs, beaten

3/4 cup sugar

1 1/2 cup chopped dates

1 teaspoon vanilla

2 teaspoons grated orange rind

2 1/2 cups corn flakes, crushed to make 2 cups of crumbs

1 can (3 1/2 ounce) flaked coconut (about 1 1/2 cups)

Directions

Combine eggs, sugar and dates in cold, lightly buttered skillet.

Cook over low heat, stirring constantly, for 10 minutes or until mixture looks creamy and thickens.

Remove from heat.

Stir in vanilla and orange rind.

Blend in cereal.

Drop by level tablespoonfuls into coconut.

Shape into balls, coating with coconut.

Chill until firm.

Makes about 32 cookies.
