How to make it

  • Combine eggs, sugar and dates in cold, lightly buttered skillet.
  • Cook over low heat, stirring constantly, for 10 minutes or until mixture looks creamy and thickens.
  • Remove from heat.
  • Stir in vanilla and orange rind.
  • Blend in cereal.
  • Drop by level tablespoonfuls into coconut.
  • Shape into balls, coating with coconut.
  • Chill until firm.
  • Makes about 32 cookies.

    It's really strange but this is about the 4th time in the last week I've seen a recipe like this! I guess that means I was meant to make them lol! :)
