How to make it

  • preheat oven to 425 degrees
  • In microwave or on stovetop, cook bacon until crisp. Crumble and set aside.
  • In a large skillet, heat the oil over medium heat. Add onion and cook until soft (about 10 minutes). Stir in bacon and set aside to cool.
  • In mixing owl, whisk together the eggs and whites. Add evaporated milk, skim milk cornstarch pepper, salt and nutmeg. Then whisk to combine.
  • Mix cheese into cooled onion bacon mixture, then spoon the mixture into the pie shell in an even layer. Pour the egg mixture evenly on top.
  • Bake the quiche for 30 to 40 minutes, or until golden brown on top and set in the center. Transfer to a wire rack to cook for 10 mintues before slicing.

    I could use some lowfat meals myself. This sounds very tasty, and the gruyere would make it excellent, with or without a lot of fat added...thanks for sharing this!
