Sweet Onion Gruyere And Bacon Quiche Recipe
I am really trying to cook low fat and healthier meals for the New Year.

Ingredients
  • 6 slices turkey bacon
  • 1 cup chopped sweet onion
  • 2 tbsp olive oil
  • 2 large eggs
  • 2 large egg whites (I use egg beaters)
  • 3/4 cup evaporated skim milk
  • 3/4 cup skim milk
  • 2 tsp cornstarch
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 3/4 cup grated Gruyere cheese (I use swiss a lot)
  • 1 frozen deep dish 9 inch pie shell

Directions
  1. preheat oven to 425 degrees
  2. In microwave or on stovetop, cook bacon until crisp. Crumble and set aside.
  3. In a large skillet, heat the oil over medium heat. Add onion and cook until soft (about 10 minutes). Stir in bacon and set aside to cool.
  4. In mixing owl, whisk together the eggs and whites. Add evaporated milk, skim milk cornstarch pepper, salt and nutmeg. Then whisk to combine.
  5. Mix cheese into cooled onion bacon mixture, then spoon the mixture into the pie shell in an even layer. Pour the egg mixture evenly on top.
  6. Bake the quiche for 30 to 40 minutes, or until golden brown on top and set in the center. Transfer to a wire rack to cook for 10 mintues before slicing.

I could use some lowfat meals myself. This sounds very tasty, and the gruyere would make it excellent, with or without a lot of fat added...thanks for sharing this!
