Low fat Mexican Frittata

- 1 clove garlic shopping list
- 1 medium tomato, peeled halved, seeeded and quartered shopping list
- 1/2 tsp ground coriander shopping list
- 1/2 tsp chili powder shopping list
- 1/2 cup chopped onion shopping list
- 1 cup whole kernel corn shopping list
- 6 egg whites shopping list
- 2 eggs shopping list
- 1/4 cup skim milk shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 1/4 cup part skim mozzarella cheese shopping list
How to make it
- Process garlic in food processer or blender until finely chopped. Add tomato, coriander and chili powder. Cover and process until tomato is almost smooth.
- Spray a skillet with cooking spray. Heat skillet. Cook and stir onion until tender. Stir in tomato mixture and corn. Cook 3 to 4 miutes or until liquid is almost evaporated, stirring occasionally.
- combine eggs, milk, salt and pepper in bowl. Add egg mixture all at once to skillet. Cook, without stirring, 2 minutes or until egs begin to set. Run a large spoon around edge of skillet, lifing eggs for even cooking. Remove skillet from heat when eggs are almost set but surface is still moist.
- Sprinkle with cheese. Cover, let stand 3 to 4 minutes or until surface is set and cheese melts.
