These are so incredibly good. I love peppers and I love steak. This recipe brings together two favorite loves. Hope you enjoy as much as we do.

Ingredients
  • 1/4 cup seasoned fine dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon snipped fresh parsley
  • 1/4 teaspoon salt
  • Dash ground black pepper
  • 1 beaten egg
  • 1 tablespoon water
  • 3 cloves garlic minced
  • 6 beef tenderloin steaks cut 1/2 inch thick
  • 2 tablespoons olive oil
  • 3 red green and/or yellow sweet peppers cut into bite-size strips
  • 2 large onions thinly sliced and separated into rings
  • 1 sprig fresh rosemary
  • 3 tablespoons red wine vinegar
  • 1 tablespoon butter

Directions
  1. In a shallow dish combine bread crumbs, Parmesan cheese, parsley, salt and black pepper.
  2. In another dish stir together the egg and water.
  3. Rub about half of the garlic over steaks.
  4. Dip steaks in egg mixture then coat with crumb mixture and set aside.
  5. In a large skillet heat 1 tablespoon of the oil over medium heat.
  6. Add remaining garlic, sweet peppers, onion and rosemary sprig.
  7. Cover and cook for 15 minutes stirring occasionally.
  8. Remove rosemary and stir in vinegar.
  9. Remove from heat and keep warm.
  10. Meanwhile in a large skillet heat butter and remaining oil over medium-high heat.
  11. Add meat then reduce heat to medium.
  12. Cook uncovered for 12 minutes.
  13. Serve with the relish.
