Wine And Cheese Checkerboards

- 2 tbsp agar-agar powder (or 6 tbsp agar-agar flakes) shopping list
- ¼ c. cold water shopping list
- Zest of ¼ lemon shopping list
- 3 c. slightly sweet, fruity red wine, chilled shopping list
- ¼ cup sugar shopping list
- 8 oz Morbier or Oka cheese, cubed into 32 pieces shopping list
How to make it
- Dissolve agar-agar in cold water, lemon zest and wine.
- Bring to a low boil, and dissolve sugar.
- Remove from heat and pour into a shallow dish to about ½ - ¾” depth.
- Chill until set.
- When gel is fully firm, cut 32 cubes roughly the size of the cheese cubes.
- Plate cheese and gel cubes in the design of a checkerboard and serve with fresh fruit.
- Alternately, plate checkerboards on crackers or thin slices of pound cake!
